Warming up?!?
Just when we thought that spring was on the way, the weatherman said the words "bitterly cold" and he was right.
So, in honour of the cold snap in the Bristol weather, here's my favourite soup recipe (sorry Nanna, it was from a library book, not you). You might not needing warming up at the moment, but sometime this year you will!
CREAM OF TOMATO SOUP
25g butter
1 onion, chopped
1 carrot, grated
3 tablespoons flour
1L chicken stock
1 clove garlic, crushed
2 leeks, thinly sliced (you can get by without these if you have to)
salt & pepper
1 tablespoon sugar
750g tomatoes, roughly chopped
250mL cream
Melt butter, add onion and carrot and cook slowly until golden brown.
Add flour and mix.
Add stock, garlic, leek, salt, pepper, sugar, tomatoes, and cook over low heat for 1-1.5 hours.
Add cream and whizz up soup with blender (important tip - make sure it's not too hot, or the plastic end of cheap blenders will melt).
Eat - yum!!
