Soup weather
I hear that it's not so warm around Melbourne at the moment, so I'll have another go at sharing a soup recipe (I know Sarah wants one!). If you haven't read/made the soup in my post from 20th March you should - it's the best tomato soup I've ever made! I don't have a photo of this one, but here's the pot that I make my soup in (thanks to Nanna & Papa).
This recipe is definitely a good one - it came from a pumpkin (well, actually a sticker on a butternut squash).
BUTTERNUT SQUASH SOUP
2 onions, chopped
3 tbs butter
500g butternut squash, peeled, seeded & diced
1 apple
3 tbs flour
1 tsp curry powder
pinch nutmeg
750mL vegetable stock
400mL milk
juice & rind of 1 orange
pinch sugar
salt & pepper
Soften onions in butter then add the squash and apple and fry for a few minutes.
Remove from heat and add flour, curry powder and nutmeg, stir well.
Slowly add stock, milk and orange. Return to heat and bring to boil.
Gently simmer for 20 mins until vegies are tender. Blend until smooth then add pinch of sugar and season well.
Yum!
